Ularthiyathu is a Malayalam word that means fry roasted. Boneless lamb pieces are cooked in freshly ground spices and sautéed with onions and then slowly roasted to get a dark brown color, which gives it a rich and aromatic flavor. This is commonly popular with thattukada (Kerala’s version of a street-side fast food) and kallukada ( toddy shop).
